Pork roast with a sauce made of apple cider vinegar

This is a very simple Jamie Oliver recipe. Will post the link below . He used balsamic vinegar , but as I was in my 21DSD I used apple cider vinegar . 

Method : 
Remove the skin from the pork .
Scour the skin and the meat.
Rub it down with a mix of chopped rosemary and thyme, salt and olive oil. Pour half a cup of Apple cider vinegar over the meat .
Heat a pan and sear the skin and meat .
Preheat the oven. 
Add the meat to the baking dish and keep chopped garlic heads and the Rosemary and thyme around it.
Bake at 180 degree C for 60 -70 min. 
Optional Cracking is made by keeping the skin on a wire rack over the meat . So the fat will drip on the meat . Yummy !! 

Let the roast cool.
The sauce can be made by reducing the drippings with some more Apple cider vinegar 




Here is my roast with a salad of lettuce leaves and home made mayo.

Banana blueberry muffins

 I tweaked the proportions A bit as I didn't want so much egg. This is my version :

2 bananas mashed
2 eggs beaten 
Mix the two.
Add a pinch of baking soda
1/2 tsp of vanilla essence
1/2 tsp of cinnamon powder
1 cup of dedicated coconut 
Mix well 
Add a bit of coconut milk if the mixture becomes too thick 
Stir in the blueberries 

Spoon into cupcake moulds
Bake for 30 min at 200 degree C

Makes 6 muffins .
Can be eaten warm or cold !!

Cream of broccoli and avocado soup

This was pretty simple .
One broccoli head 
One avocado
Coconut cream/milk
One onion
Coconut oil

Method :
Heat coconut oil on a pan and add chopped onions . Fry till the onions. Tubs translucent . Add broccoli florets and stir fry . Add some water and steam the broccoli , once it is tender add the avocado . Add salt . Blend .
Add coconut cream.


Pan seared salmon with steamed veggies


Chicken Stirfry

My resourceful helper came up with this dish . It is a simple stir fried chicken with bell peppers , cucumber and walnuts. Seasoned with liquid aminos 

Almond - Hazelnut Bread

After many unsuccessful attempts , this one was one that actually works for me . It had a nice crust and the bread is light and moist unlike my other attempts that were heavy and dry. 


I have modified it a bit from a recipe I originally found on the net.

Here is my modified version :

1 cup almond flour
1 cup hazelnut flour 
1-2 tsp honey (optional )
2 tbsp almond butter
2 tbsp hazelnut butter 
3 eggs
1/2 tsp baking soda
1/2 tsp baking powder
A pinch of salt
A handful of nuts ( I used walnut and sunflower seeds )
1/2 tsp Vanilla essence (optional )
Olive oil ( optional if you like the taste )


Beat the eggs .
Add honey and vanilla.
Add the nut butters.
Add olive oil 
Mix well.

Seperately, 
Mix the almond and hazelnut flour.
Add the baking powder, salt and baking soda to the flour mixture . 
Add the nuts.

Mix the flour mixture to the eggs.
Pour into a mould lined wit wax paper .

Bake at ard 170 degree C for ard 20 min. Check in once at the 15 min mark to ensure things are on track . The bread is done when a knife comes out cleanly.

Let it cool and eat.


Update on 6/11/2014

I have been experimenting with this quite a bit. Have added flaxseed meal to the mix . For more flavor I have been adding caraway seeds, olives , sundried tomatoes etc . Been having fun with this bread basically .

Hello World !

This september I did the 21 day sugar free detox with an awesome gang of girls in sunny SG , and boy was that an eye opener . Right from getting to know the hidden sugars in innocuous food items , to getting mindful about what we eat , to reading food labels , to meeting these lovely ladies who were a brilliant support system. The best part is I finally lost the baby fat that was making me so miserable . I loved the whole experience so much that I have decided to make it a more permanent part of my life . Ok probably not as strict as the 21 days , but very close . 

I started this blog to chronicle the food I experiment with that suits this new life style . I'm planning to document the recipes I used, links to the sites I refer to as well as outside food that suits the sugar free gluten free lifestyle . This is more like a diary for me to remember the recipes that work for me , but if some one else can gain out of it , that would be great .
